Türkiye’de hayvancılık sektörü içindetavukçuluk sektörü en gelişmiş ve rekabet etme potansiyeli en yüksek olansektördür. Son dönemlerde Türkiye’de kırmızı et sektöründe yaşanan fiyatartışları sektörün önemini daha da arttırmıştır. Ancak zaman zaman gündemegelen hormon ve antibiyotik kullanımına ilişkin haberlerin kanatlı etitüketimin olumsuz etkileyip etkilemediğini belirlemek amacıyla toplam 475 kişiile yüz yüze anket çalışması yapılmıştır. Yapılan çalışmada Kars ilindekitüketicilerin hormon ve antibiyotik kullanımına ilişkin çıkan haberlerdoğrultusunda %70’inin tavuk etini riskli olarak gördükleri ve özellikle gelirdurumu yüksek olan tüketicilerin tüketimlerini önemli ölçüde azaltırken, gelirseviyesi düşük olanların fiyatın düşmesine bağlı olarak tüketimleriniarttıkları belirlenmiştir. Bu bakımdan Gıda Tarım ve Hayvancılık Bakanlığı ilebirlikte sektör paydaşlarının tavuk etlerinin antibiyotik ve hormon kalıntısıyönünden yasal mevzuata uygun olduğuna yönelik bilgilerin düzenli olarakkamuoyu ile paylaşılmasının sektörün daha da büyümesi açısından önem olduğudüşünülmektedir.
Within the livestock sector in Turkey, thepoultry industry is the most advanced sector with the highest potential ofcompetition. The recent price increases experienced in the red meat sector inTurkey has increased the importance of this sector. Within this context,face-to-face surveys were conducted with a total of 475 people to determinewhether the news about hormone and antibiotic use from time to time adverselyaffected the poultry consumption. In the study conducted, it was observed that70% of the consumers in Kars see the chicken meat as risky in the direction ofthe news about the usage of hormones and antibiotics. In addition, it has beendetermined that consumers with particularly high incomes significantly reducethe consumption of poultry meat, while those with low-income levels haveincreased their consumption due to falling prices. In this regard, along withthe Ministry of Food, Agriculture and Livestock, it is thought that it isimportant for industry stakeholders to share information regularly with thepublic on the fact that chicken meat is in compliance with legal regulations interms of antibiotic and hormone residues.
