Oxidation is oneof the major causes of deterioration of fats in animal products. Rapidoxidation capacity of unsaturated fatty acids should be taken into account forthe safety of products. Oxidative stability of animal products can be alteredby feeding regiment and feed additives. It seems that supplementation ofseveral dietaryadditives such as herbal products, vitamin E and Se have degreasing affect onlipid oxidation.
