dc.descriptionSadeyag (clarified butter); is a dairy product which is produced from milk fat and is of higheconomic and nutritious value. The aim of this study was to determine the Reichert-Meisslnumbers in the samples of sadeyag produced in Şanlıurfa province. 74 samples in 2013 and182 samples in 2014 were collected from Şanlıurfa province and towns for create the studymaterial. The Reichert-Meissl numbers of the samples were done in accordance with TS 1331standard. The mean Reichert-Meissl numbers of sadeyag samples collected in 2013 and 2014are 18.90±7.17 and 24.14±5.82 respectively. The lowest Reichert-Meissl number was 0.44 andthe highest Reichert-Meissl number was 29.96 in all samples analyzed. When the ReichertMeisslnumbers of the sadeyag samples were compared with other research findings, it wasfound that the average Reichert-Meissl number was lower.
dc.descriptionSadeyağ;süt yağından üretilen gerek ekonomik gerekse besleyici değeri yüksek olan birsüt ürünüdür. Bu çalışmanın amacı Şanlıurfa ilinde üretilen sadeyağörneklerinde Reichert-Meissl sayılarını tespit etmektir. Şanlıurfa il ve ilçelerinden2013 yılında 74 adet, 2014 yılında 182 adet sadeyağ örneği toplanarak çalışmamateryalini oluşturmuştur. Örneklerin Reichert-Meissl sayılarının tespiti TS1331 standardına uygun olarak gerçekleştirilmiştir. 2013 yılında toplanansadeyağ örneklerine ait ortalama Reichert-Meissl sayıları 18.90±7.17, 2014 yılındatoplanan sadeyağ örneklerine ait RM sayıları ise ortalama 24.14±5.82 olarakbulunmuştur. Analiz edilen tüm sadeyağ örneklerinde en düşük Reichert-Meisslsayısı 0.44, en yüksek Reichert-Meissl sayısı ise 29.96 olarak ölçülmüştür.Sadeyağ örneklerinin Reichert-Meissl sayıları yapılan diğer çalışmalar ilekıyaslandığında ortalama Reichert-Meissl sayısının daha düşük olduğu tespitedilmiştir.
